I do know that at 15%, the car displays additional services: A1, B123... if the system is reset earlier than when 15% oil life shown, how to know what additional services were needed?

Take note of the section titled: Resetting the Maintenance Minder. This details the importance of accurate record keeping for the vehicle.

And these are what you should be looking for and having done based on your Maintenance Minder indicator in the dash....

Hope this helps those who aren't familiar with how Honda/Acura have implemented ways for the client to know what to expect on maintaining their vehicles. They really have made huge strides in making it easy for their clients to be aware of what all is involved whether it be a simple oil change, tire rotation or something more in depth. Remember to always follow the maintenance minder and take the car to an Acura or Honda dealer to have the work done. Don't skip the items that are due and make sure your dealer is resetting the minder based on what work was performed.

If we do our own work and reset the maintenance minder, does it add a date/mileage log so that Honda in the future can see when the work was done?

This info is available to dealership personnel as a job aide on the parts/service side of the business. I wanted to share it here for the benefit of the community. Every time the maintenance minder is reset, the ECU makes a log of it. Once the vehicle is connected to the HDS tablet at the dealership, everything can be seen by the technician.
