Assuming they are the correct frequency the car will pick them up. It make take a few minutes of driving around for them to appear on the dash display but there is nothing you need to do setup-wise.
A higher boiling point is definitely what you are looking for and going to DOT 5.1 is not a necessary step. There are many DOT 4 fluids that are more than suitable for track day use, such as Motul RBF 600 and 660 (RBF 700 is likely overkill for what you're doing) or ATE Gold 200.

I think we are quite aware that it shows on the both the HVAC display and the entertainment system whenever you make a change to the HVAC settings and choose something other than Auto. I am specicially asking about when the HVAC is set to Auto. I thought that was clear from the thread title.
